Poached Egg, Salsa, Avocado/Steak and English Muffin Breakfast

I love breakfast, I really do. However, I don't often have time to make an amazing meal. Usually on the menu is cereal, yogurt, toast, fruit, oatmeal...BORING. I want sparkle! I was glam! I want FLAVOUR!!! Wouldn't you feel the same if you were condemned to tiresome breakfast food? Well here it is folks, a reason to break free! (Pun intended muahaha)



I have to admit, I feel as if I have mastered the art of poaching eggs (as seen in my previous post of How To: Poach an Egg) or... perhaps I have just become accustomed to eating them the way I make it. Either way, it doesn't seem to take long or much effort to poach. But I have made this with just a fried (over easy) egg before and it was tasty just the same.

I offer up 2 versions of this recipe - vegetarian and meat lovers. The meat lovers stem from the fact that I had some left over the night before and just thought - hey why not. Protein gooooood.

Poached Egg, Salsa, Avocado/Steak and English Muffin Breakfast
Time: 5 min.           CPS: $0.78 for 2                 L of D: Undergraduate

1 English Muffin (whole wheat preferred)
2 Eggs
2-4 Heaping spoonfuls of Salsa
1/4 an Avocado OR left over steak

Put english muffin in toaster. Poach or fry eggs.

Heat up salsa in the microwave - I do this because it is not tasty eating warm food and ice cold salsa. Once heated, place spoonfuls on english muffin halves.

Place avocado or steak on top of salsa. Top with egg. Cut and devour.

Wow, that probably took the same amount of time to write it as it did to make it.
