Eggplant Pizza Version 2.0


Ready for Eggplant Pizza Version 2.0? If you recall, Eggplant Pizza Version 1.0 was not only easy on the taste buds, easy on the wallet as well as easy on the eyes. Version 2.0 meets all the same qualifications but takes things up a notch. In more traditional pizza format, this pizza is hearty enough for the winter yet fresh and light enough for the summer (contradicting no? Whatever - I eat it all the time and hopefully you will too!)



This pizza was also a star at a recent pizza party I hosted! You can read more about it here. I can safely say this recipe is a friend favourite. It tends to please most taste buds!


Eggplant Pizza Version 2.0
Time: 30 mins          CPS: $1.55 (pizza split between 4)       L of D: Undergraduate

- Pizza Dough
- 1 can of Pizza Sauce (or just tomato sauce haha)
- 1 Tbsp of Oregano
- Handful of sliced mushrooms
- 2 Tbsp of chopped basil
- Goat Cheese (as much or as little as you want)
- Olive Oil
- Red Pepper Flakes (TOTALLY optional)


Preheat oven to 450 degrees. Roll out pizza dough to fit a baking sheet. Spread your favourite pizza sauce all over it. Cut thinly slices of eggplant and lay them  overlapping all over the dough. Spread out mushrooms out over top. Sprinkle oregano all over as well and drizzle with olive oil.


This in where you can add red pepper flakes. Like I said, it is clearly optional - mainly because I never used them. I am a huge wimp and find spicy stuff unbearable. In fact recently I just touched a jalapeno and was sent into a burning frenzy. But that is another story for another day. =)
Place in oven for approximately 15 minutes. Pull out and crumble goat cheese all over the pizza and put back in for about 5-7 minutes or until the crust is golden brown and the goat cheese has melted slightly.

Chop some fresh basil and sprinkle over top. Please try not to skip this step if possible - to me it personally defines the pizza but hey lets face it, fresh basil is not always easy to get your hands on! 

Since this is a friend favourite, it is hard NOT to share it with friends - they will certainly be impressed.
